Emily Boles picks spinach at Luna Bleu Farm in Royalton, Vt., Thursday, Dec. 19, 2019, in preparation for a weekend farmers market in Norwich. A first crop of greens is planted in late September and early October and a second in late February and early March. Farmer Suzanne Long said this timing is key for allowing the plants to mature enough to produce while growing more slowly in the cold temperatures. (Valley News – James M.
